For the first week of my juicing cleanse I am having the following juices:

My Yum-Yum Juice (Cranberry Citrus)

1Cup Cranberries
1 Orange, peeled
1 Apple
1 Squash
4-6 Collard Leaves

Apple Green Grape

3 Apples
1 Cup Green Grapes
1 Lemon wedge

Red Juice

1 Cup Raspberries
1 Cup Strawberries
2 Apples

Simple, cheap, yummy and quick meal!

Take some boneless skinless chicken breasts and some of you favorite veggies (I used cherry tomatoes, mushrooms, black olives, and spinach) and throw it into a baking dish. Cook at 450 until done! Told you it was simple! The whole meal (which had 4 servings) cost around $5. That is $1.25 a serving!

I HAD to post this recipe! First off, it is simple and quick. Secondly it is cheap. And last but not least…. It is so so so so good!!! Even the next day!!! I will probably make it again this weekend. For just me and my husband this lasted at least 6 meals (3 a piece). In the original recipe it called for avocado and mango, both I somehow forgot to write down on my shopping list.


1 small head iceberg chopped, about 6 cups
15 oz. canned black, drained and rinsed
1/2 cup shredded Cheddar cheese, or more to taste
1/2 cup sliced black olives, drained
1/2 lb cooked and shredded chicken breast
1/2 lime, juice only
1/4 – 1/2 cup vinaigrette dressing, or to taste
1 cup tortilla chips, crushed
1 cup salsa, for serving

1. In a large serving bowl, combine the lettuce, beans, cheese, olives, and cooked chicken . Sprinkle it with the lime juice and dressing and toss it thoroughly.2. Top the salad with the chips, Serve it immediately, topped with a dollop of sour cream and salsa, if desired.

So I have to put my all time FAVORITE healthy recipe up here!!!!!! Even if you aren’t a huge zucchini fan I beg you to try these! I can’t describe how yummy they are and with only 60 Calories per cup I can nom nom nom all day!!!

2 Large zucchini, sliced into 1/4 inch disks
1/4 cup Dry breadcrumbs1
1/4 cup Grated fresh parmesan cheese (or grated asiago cheese)
2 Egg whites
1/4 tsp Seasoned salt
1/4 tsp Garlic powder
1/8 tsp Freshly ground black pepper
Optional Seasonings: 1/4 teaspoon of any of the following: dried onion powder, oregano, Mrs.Dash seasoning, Cajun seasoning, Stevia, parsley, or basil

Preheat oven to 450 degrees. Line baking sheet with parchment paper (or foil will work, but parchment paper works best), and spray with non-stick cooking spray.

Wash zucchini and slice into 1/4 inch slices.

Mix the bread crumbs, Parmesan and seasoning in one bowl.  Place the egg whites in another bowl.

Dip zucchini slices in the egg whites, followed by the breadcrumb mixture, coating them evenly.

Spread zucchini out on in a single layer on the baking sheet. Roast 7 minutes. Turn zucchini over. Roast another 7-8 minutes, or until coating is crispy and golden brown. Serve immediately.
