I have my 5K in about a week so I am crazy busy with train and catching up with some school work now that I have a nice quiet house :). The next few weeks are going to be crazy!!!! I have a job interview, that I have a seriously good chance of getting, for something I LOVE!!!! I also have several doctors appointments. And of course my lovely 5K šŸ™‚

I was watching The Biggest Loser a few days ago and theĀ contestantsĀ were actually running a 5K. I got so motivated watching that show! It is crazy how things come into your life at the time you need them. So in my mind I know that if 300+ pound people can run/jog a 5K without really training for I knowĀ I can do it as well!

I cannot wait to update you on how my 5K went!!!!

I am VERY excited toĀ announceĀ that I am running my first 5K in 2 weeks!!! I am doing the Color Run. If you haven’t heard of it you should really check it out! Great for beginners. The next couple weeks I will be training my butt off! This is just the push I need to start being serious about exercising again!

I HAD to post this recipe! First off, it is simple and quick. Secondly it is cheap. And last but not least…. It is so so so so good!!! Even the next day!!! I will probably make it again this weekend. For just me and my husband this lasted at least 6 meals (3 a piece). In theĀ originalĀ recipeĀ it called for avocadoĀ and mango, both I somehow forgot to write down on my shopping list.

SUPER YUMMY… MUST HAVE AGAIN!!!

Ingredients
1 small head iceberg chopped, about 6 cups
15 oz. canned black, drained and rinsed
1/2 cup shredded Cheddar cheese, or more to taste
1/2 cup sliced black olives, drained
1/2 lb cooked andĀ shreddedĀ chicken breast
1/2 lime, juice only
1/4 – 1/2 cup vinaigrette dressing, or to taste
1 cup tortilla chips, crushed
1 cup salsa, for serving

Preparation
1. In a large serving bowl, combine the lettuce, beans, cheese, olives, and cooked chicken . Sprinkle it with the lime juice and dressing and toss it thoroughly.2. Top the salad with the chips, Serve it immediately, topped with a dollop of sour cream and salsa, if desired.

I am very excited toĀ announceĀ that I will be training to run a 5K tomorrow! I have never ran before but I do enjoy walking and being outdoors. Walking gives me a good exercise where I feelĀ accomplished but not so tired where I can’t do my yoga or other exercises the same day. I found a really great training program for beginner runners. And when I say beginners I mean for people that have never exercised or ran ever. It is a 9 week program and it is set up in a way that won’t leave me feeling discouraged!
