So I had heard about Kale Chips a while back. I was kind of scared to try them because I had never messed with Kale and frankly plain ol kale tastes exactly how it looks… Not good. I got a little more comfortable with it during our juicing cleanse. Still didn’t love the taste but it was more tolerable. And because of the all the nutrients I NEED this in my diet whether I like it or not!
Anyway… We had a couple of bunches of kale left over from our cleanse and I decided to make kale chips! I must say… It wasn’t that horrible. My husband LOVES them and already ate two batches. We just tried them plain (recipe posted below). Next time I will add some different seasonings to make it less bitter/kale tasting. Also make sure you don’t add to muck extra virgin olive oil to them or they will just turn into limp kale and not kale chips. I know this because my second batch I all of a sudden thought I was some master kale chip maker and didn’t think I had to measure anything ;).
One more thing before I post the recipe… Be sure to get ingredients that are minimally processed and don’t have any chemicals or added crap (also known as- Clean Food). Just check the labels! Especially on the extra virgin olive oil!
After about a week of not having any clean choices, besides my juice, I FINALLY get to go to the store! I am more excited about this trip than any other because it is my first all clean shopping list! I was so excited I actually organized my list instead of having a bunch of random things, that will HOPEFULLY make a meal and if it does it isn’t going to be that healthy. I am actually buying snacks (which I never do)! And because I am so excited I am rambling, again… I find that I am doing that a lot! Anyway, here is my menu plan for the next week, or so. Once they have my “Stamp of Yummyness” I will post the recipe!

I will also make a post about what I spent for week worth of clean eating for two! Most of the recipes I found were budget friendly and/or had only a few ingredients. We normally have a budget of about $300-$400 a month for groceries. I am hoping that grocery bill will stay about the same (or even cheaper!) with clean eating vs unhealthy.
Another note: I am shopping at a chain Farmer’s Market. We went there last week for the first time for our juicing cleanse and that had great selection for fairly good price!

The Healthy Housewife
The last post I made I talked about the things I never thought I would say to my cat. Basically how much of a handful he is! And here is proof that he is a big meany that thinks he owns the house….
Since I posted the “Cat List” he has stolen my seat and when I tried to share he started to literally try and push me out of the chair. He gives up and I get up to go pee and come back to this… He not only stole my chair, he is giving me the stink eye! (Side Note: He only has one eye). Just thought I would let you see what I am dealing with as I am typing 😉
I figured I would start doing a “Random Thursday” post every week. Just stuff that happens in my simple life that I find amusing. Nothing about weight loss, juicing, or being healthy.
Things I never thought I would have to say to my cat… But do on a daily basis:
1) “Stop chewing on my table”
2) “Give me back my lighter, watch, toe nail clippers and my socks”
3) “Stop hiding all my stuff under the oven”
4) “Stop abusing me for ice!”
5) “Hold still while I pull the shoe string out of your throat”
5) “Get out of the dishwasher”
6) “Stop taking my blinds down”
The weird award has to go to:
7) “Stop humping my stuff animals”
And his newest obsession:
8) “Quit pulling down my sweatpants!”
Now it could be lack of sleep as the reason I find this so amusing… One thing is for sure, He Keeps Me On My Toes!
While I was yelling at myself in the last post I forgot to add the wonderful juice I had yesterday!
It might seem weird that I am even posting this but….. Just juice some apples! Seriously get a bag of apples and get busy!
I never EVER liked apple juice until I tried “real” apple juice! Without any added sugar, chemicals and other crap. It is so good!!

The Healthy Housewife
So the past few days since I had finished with my juicing I haven’t been feeling the best. My body has been achy, I have no energy, kinda depressed for no reason, and I can’t sleep. My husband brought up a point that I didn’t think of (and now I feel stupid for not thinking of it)…. He reminded me that I haven’t been exercising like I normally do. While I was juicing I decided to only do light exercising (short walks, etc) since I wasn’t getting a whole lot of calories. I guess it just didn’t occur to me that I hadn’t picked back up on my “super exercise” where I do Insanity and go for either a 5 mile walk or a 1 mile run. When I do my “super exercising” I have a crazy amount of energy and feel and sleep so good.
Well that got me thinking about how many times I didn’t listen to my body telling me to give it more of the good stuff! While I was juicing I felt awesome because my body was craving that nutrients that I had been starving of for so long. When I get off my butt and make a choice to be active and healthy I am rewarded with pride and feeling overall awesome.
I guess I should take my own advice about “No Excuses”. Because it seems this week I am making a lot of them… I blame my lack of exercise on “not feeling good” when actually the reason I don’t feel good is because I am not exercising. I haven’t been eating as healthy as I should, granted I have been eating a lot healthier than I ever have, but there is a lot of room for improvement and my excuse for not having healthy choices in my home??? “My husband works nights, we only have one car, and I don’t feel like getting up early”… Now to me if I exercised I would feel better, get better sleep, and be able to wake up early and go shopping. It is one giant circle!
So I have to put my all time FAVORITE healthy recipe up here!!!!!! Even if you aren’t a huge zucchini fan I beg you to try these! I can’t describe how yummy they are and with only 60 Calories per cup I can nom nom nom all day!!!
|2||Large zucchini, sliced into 1/4 inch disks|
|1/4 cup||Dry breadcrumbs1|
|1/4 cup||Grated fresh parmesan cheese (or grated asiago cheese)|
|1/4 tsp||Seasoned salt|
|1/4 tsp||Garlic powder|
|1/8 tsp||Freshly ground black pepper|
|Optional||Seasonings: 1/4 teaspoon of any of the following: dried onion powder, oregano, Mrs.Dash seasoning, Cajun seasoning, Stevia, parsley, or basil|
Preheat oven to 450 degrees. Line baking sheet with parchment paper (or foil will work, but parchment paper works best), and spray with non-stick cooking spray.
Wash zucchini and slice into 1/4 inch slices.
Mix the bread crumbs, Parmesan and seasoning in one bowl. Place the egg whites in another bowl.
Dip zucchini slices in the egg whites, followed by the breadcrumb mixture, coating them evenly.
Spread zucchini out on in a single layer on the baking sheet. Roast 7 minutes. Turn zucchini over. Roast another 7-8 minutes, or until coating is crispy and golden brown. Serve immediately.
Please ignore my messy table!!! We make our own cigarettes (one thing we are stopping!) and it can get a little messy! 😉
Anyway this is the best juice I have tried so far! Don’t let the color turn you off it really is awesome and it tastes like cranberry juice! Everything should be organic. But I know how expensive that can be!
1 cup cranberries (I usually add a little more)
1 orange, peeled
1 cup butternut squash (usually I just use a small to medium)
4-6 collard leaves
Just juice it, stir, pour over ice, and ENJOY!!!
